Big Levain-style Cookies

My go-to cookie recipe. Makes huge puck sized cookies that are great for sharing… or not.
Ingredients
Dry stuff
- 1 cup cake flour (all-purpose is also fine)
- 1 and 3/4 cup all purpose flour
- 1 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp salt
Other stuff
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 cup (2 sticks) of butter
- 2 cups chocolate chips
Steps
Making the dough
- Cut the butter into cubes and cream with the sugar.
- Mix in the eggs.
- Add the dry ingredients slowly and mix until everything is incorporated, but don’t over mix.
- Fold in chocolate chips.
- Let cool in the fridge for 10-15 minutes
Baking
- Form dough into rough 1 and 1/2 inch spheres, rough is fine, don’t work with it too much
- Place onto a baking tray, bake for 15-18 minutes at 375 (until golden brown)
- Let cool and enjoy!
Notes
Some people like walnuts in their cookies - I do not, but feel free to mix in whatever you like!
These cookies will bake to have a gooey inside. I find that they’re even better the next day.
Tip: Freeze some of the dough balls so you can have them later. 375 for roughly 20 minutes straight from the freezer will work.
