Pancake Shot

Ingredients

Dry stuff

  • 2 cups flour
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1/2 tablespoon white pepper

Wet stuff

  • 1 tablespoon oil
  • 1/2 cup hot water

Other stuff

  • Scallions, a lot of them

Roux

  • 1/4 cup oil
  • 1/4 cup oil

Steps

  1. Mix dry ingredients and oil together.
  2. Mix in hot water and knead until smooth (roughly 5 min)
  3. Let the dough sit for one hour
  4. Make the roux - add oil and water and cook until thick and color changes
  5. After an hour, roll out the dough till thin (thinner the better)
  6. Spread roux on the dough and then sprinkle scallions on top.
  7. Roll up to a log, then spiral the log from both ends until they meet in the middle. Then place one spiral on top the other and smash down.
  8. Let the dough rest for another 30 min to relax.
  9. Roll the dough out and then heat in medium/medium-low skillet until golden brown (roughly 8-10 min)
